Farmer’s Market, South African Wine & Mexican Lasagna

A Special Mexican Lasagna
A Special Mexican Lasagna

Laura has done a wonderful job on keeping herself trim and fit. However, every once in a while her weight falls too far and emergency steps need to be taken. It is what the Polynesians call “going thin.”

However, there is a cure! We call it  La Hermosa Laura’s Mexican Lasagna.’

After a week on  Jenny Craig, we like to have a special Saturday Lunch to enjoy, celebrate and plan for the week ahead. However, before preparing lunch, we make the 2 mile walk to Farmer’s Market in San Luis Obispo to buy tomatoes, pistachios, onions and …. artichokes! Laura took this picture of me at our favorite local coffee shop, the Nautical Bean.

Now... this is an Artichoke!
Now… this is an Artichoke!

This will be Sunday’s lunch served with Garlic Butter!

Bon Appetit!

PS. Congrats to SC’s great Men’s Basketball team for winning the Pac 10! … and congrats to Tennessee in their win today.

twitter search engine is very cool

Search on Twitter reveals lots of Bread Pudding Ideas!

Karen placed a link on my blog, actually all of our blogs, on a ‘twitter search engine’. This is very cool! First of all, it gives you the opportunity to see what everyone is talking about… and sometimes… they are actually talking about you!

So, I plugged in to see if anyone, and I mean ANYONE, was talking about ‘bread pudding’… and surprisingly, quite a few were talking about it…

However, I love our recipe!

on valentine’s day, cook for her

use only the best egg noodles!
use only the best egg noodles!

Cooking something special for her on Valentine’s Day is not just the mark of a truly wise man, but also not as hard as it looks. Ask yourself, what are the three primary food groups that women love? (answer: butter, noodles and cheese) Here hangs a tale and a suggestion.

One day, trying to find something his pregnant wife might enjoy, a young man went into the kitchen and made her a tasty meal consisting of a sauce made with butter and parmigiano cheese poured over egg noodles. She loved it and — as they say — the rest is history !  90 years later, ‘Fettuccine Alfredo’ is loved around the world and so easy to make! To complete the meal, chill a bottle of champagne and fix a little chocolate dessert and celebrate Valentine’s day in style.

Here’s a link at the  original restaurant that popularized this very simple but delicious meal!

Now, for our Valentine’s Day, I’ll have a few additions — but no substitutions — first, I will saute a dozen large scallops in garlic butter and wine , then place on a bed of cooked and drained noodles , then I’ll cover it all with my Alfredo-like sauce. Since I am using seafood, I want a little zip in my sauce… so here’s a peak at what else goes into it ( I’ll provide the details tomorrow):

butter
heavy cream
Grated Parmesan, Romano and Asiago Cheeses
white pepper
sea salt
garlic
sauteed sweet onion
chives ( and for garnish)
savory
mustard
nutmeg

Enjoy Valentine’s Day!

Twitter On!

Coach Pete Carrolls Twitter background
Coach Pete Carroll's 'Twitter' background

Okay, I am a big fan of sports, married a sports fanatic and have three sports enthusiasts for daughters… life is good.

So, obviously I follow  SC football Head Coach Pete Carroll when he joined ‘twitter’... yes, I was one of the early followers. ( does that sound snooty enough?)  What I have learned about ‘twitter’ I credit to my daughter Karen ( SC athlete, record holder and masters graduate from Annenberg’s impressive PR program at SC) and… yes… Pete Carroll, himself.

Coach Carroll and his staff continue to refine and focus their image, improve their message, target their audiences and present the best product year after year. Of course, this is what SC does! They are always ‘cutting edge.’ SC finds a wonderful balance between theoretical and practical, to quote a great American Psychologist:

“the truth is what works” — William James

So I captured Coach Carroll’s background image to see how he did it… and where he has it hosted: Amazon.com!

SC continues to amaze, inform and educate me… it’s what they do!

Twitter on? Fight on!

PS. Yes, I am on ‘twitter’ ,too!

Twitter keeps you in touch with the things and people you love

Well... keeping up with the family on technology s a bit of an arms race!
Well... keeping up with the family on technology is a bit of an arms race!

Our family has always embraced technology. It is educational and it can be a lot of fun!

I have enjoyed facebook as a way to keep in touch with folks, but I am finding that Twitter is a nice way to easily follow people, organizations and news in a convenient format straight to your phone… or on-line.

All three of my daughters: Kristin, Karen and Karla are tech savvy and it causes their mother and I to work very hard to keep up and very occasionally impress them! I noticed that SC Trojan Head football coach Pete Carroll was on Twitter and I added him and began following him on Twitter. Nobody does it as good as SC when it comes to doing what works… and it inspired me to put up a background for my Twitter site. Here’s where the family contest came in… everyone wanted to do their own! WOW… they look great!

Now, I can follow various culinary chefs, the Trojans and the musings of friends and family from the comfort of my phone. It’s really nice to stay in touch. Try Twitter
