Sometimes, you just don’t want to know!

My bride of 36 years asked me for the recipe for yesterday’s “Boston Cream Pie” that I had a chance to blog about and post.

The first thing she asked,”How many servings do you expect to make from this cake?”

I knew where she was going with this, she intended to make a nutritional analysis and I intended to not fall into her trap!

“Oh,” I said, “about 50 servings or so!” She was not amused. ( it is 12)

Any good Boston Cream Pie is going to be heavy on the calories and Cholesterol… but that – I am afraid to say – is what makes it so good! I am reminded that I am still ‘watching my weight’ and yet I know that I can plan a grand culinary experience on occasion. The key to any diet plan is portion control, let’s face it.

This is what makes “Jenny Craig” work.

So, don’t get scared off of delicious food because of what it is… or you will miss the experience. If you plan for these dietary ‘departures’, you can always work it into the menu … and for me that’s once a week!

West Point Boston Cream Pie?

West Point Boston Cream Pie?
One of the desserts that my mother-in-law June, my wife Laura and my Daughter Kristin really enjoy is a version of Boston Cream Pie. I use the word ‘version’ because it is really a cake and not a ‘pie’… it should be Boston Cream Cake.

In any event, Kristin enjoyed Boston Cream pie whenever it was served while she was at the United States Military Academy at West Point. I had actually been one of the few toured around their kitchens …. and with Kristin’s description I thought I could put it together… just a bit more expensively.

So here’s my interpretation.

I made it a bit differently starting with a white chocolate cake with Amarula. The custard filling resembles the wonderful French custard fillings found in such places as Del Monico’s in the 19th century. No shortcuts and no substitutions!

2008… going , going…..

2008 is half over!

It is amazing how fast this year is going by… I am reminded with the approach of all the big dates in my life… our anniversary, my wife’s birthday and 2 of my daughter’s birthdays!

Time may not fly… but it passes awfully quickly.

Speaking of changes… look who’s on Facebook?

Laura and I joined Facebook for the ease of communicating with our daughters… who now find it easier to download Facebook on their phones wherever they go. My eldest daughter suggested that I put up any projects I am doing as a photo album as her Blackberry can handle it much better than my humungous picture files… sounded like good advice.

So although some folks may be a little self conscious about letting SOME people become part of their “friends” network… it’s not really such a bad idea… you never know who might wind up with one of your pictures! Karen posted an interesting blog on this subject!

Facebook still can be fun… especially if years from now you haven’t posted anything that will haunt you.

My Green Vehicle

Well, here I am sitting on my ‘green’ vehicle… I like to sneer at all those ‘gas guzzling’ Prius’s and Hybrid polluters! Ha!

Now, I am quite a different man since I had my last few pictures on my bike… say… a hundred pounds or so…. and I had quite a beard, too. I guess I am into my skinny old white dude phase. Besides, I don’t get as many tickets looking like this. Thanks Jenny Craig!

It was a lot harder to do than it looks!

Want to cook…. get an image!

every cook needs an image

Everyone in my family loves to cook…. as they say, ‘never trust a skinny chef!’

So,  Jenny Craig  has been a wonderful thing for all of us to get us on track after some of our more fabulous meals!

Karen loves to make Carrot Cake which is just… let’s say wonderful.

Kristin makes many wonderful things… but I love her Seafood Lasagna most of all!

Karla makes great sandwiches.

Mom does it all!

As for me, I enjoy sampling what everyone makes which has been my downfall in the past. Today, if I am going to indulge  … I do so once a week.

Laura made a stuffed bell pepper with a precooked Paella filling ( ‘percooked’ is a better phrase than ‘leftovers’)…. yummy!

So , tomorrow… it’s back in the world of Jenny!
